Our reputable mobile sharpening fleet and mobile store reaches restaurant and hospitality clients throughout San Antonio, Austin, and Houston.
Star Chef Store adds brick-and-mortar convenience for discerning culinary professionals in the San Antonio area who need sharpening, repair or supplies between scheduled routes. Home cooks now also have a place to bring their knives for the same level of care and attention.

Star Chef Store uses sophisticated, proprietary sharpening equipment, engineered specifically to maintain the necessary geometry and integrity of culinary instruments. Different types of knives require different sharpening techniques, and even two identical knives can require different adjustments to suit the user. Our attention to such details enables us to deliver distinct results that change lives in the kitchen.

Star Knife Sharpening is a full service, on-site culinary knife sharpening and repair service for fine dining restaurants. We have been providing top of the line personal service to the culinary industry for 15 years.
Each truck in the fleet services fine dining kitchens on-site and cares for their professional cutlery and kitchen blades. Our trucks travel to each restaurant location so that the staff and work flow is never disrupted. Each truck is equipped with the patented sharpening equipment and also houses a complete cutlery store. We continue to serve the San Antonio metro area, the Houston Metro Area and the Austin Metro area, as well as the Hill Country.
The owner and founder, Dominique Besson, is a formally trained chef from Paris, France. After completing culinary college in France, Mr. Besson worked and opened several restaurants in Paris, and subsequently came to the US in 1987 to live his dream of becoming an American in every way.
After working as chef for years in the US, Mr. Besson delved into the restaurant equipment industry as the National Sales Manager for a famous fine restaurant supply manufacturer based in Paris since the 1800’s, and established them here in the US. It was after this that his love for the industry led him to open his own company which is now Star Knife Sharpening.
Star Knife Sharpening has enjoyed great success and great relationships in the industry with Dominque’s connection to the art of cooking in a restaurant setting, most especially being a chef. His visits to each kitchen are a sight to be seen, as every face lights up when he enters, excited to see and exchange culinary secrets with a respected contemporary.
Not only can he sharpen and repair their precious tools like no other service, but he mentors and teaches and trouble shoots in the kitchen when needed due to his many years of experience in the kitchen.
The system that we use is not just any system. The system was invented and created by a working engineer who grew up in the food industry and knew that there “had to be a better way”. With meticulous interest in specifically culinary knives and maintaining and respecting their inherent and necessary geometry, the system was developed by this engineer and is patented both for machine construction as well as use. It is a requirement that any person who operates the actual system be trained by the inventor himself! In this apprenticeship period, a sharpener learns the specific geometry of culinary knives and how to respect that when sharpening and repairing culinary tools. Only those who have completed this apprenticeship may operate the machinery. All of our sharpeners have completed this training with the creator of the system. A culinary knife is not just “a knife like all knives”. Training is also completed for scissors, hunting knives, swords, pocket knives, gardening shears, and other types of blades. All types require a different method.
Chef Dominique Besson, a native of Angres, France, began working in professional kitchens at age 16. By 18, he was opening and overseeing restaurants in Paris. Trained at L’Ecole Hôtelière Curnonski in Saumur, Dominique later broadened his culinary footprint to learn the restaurant equipment industry, serving as national sales manager for Paris-based fine restaurant supplier, Matfer Bourgeat, and establishing Matfer Bourgeat USA after relocating to the U.S. in 1987.
Dominique and his wife, Domenica Besson, also a food service supplies and services professional, opened Star Knife Sharpening in 2006 and Star Chef Store in 2020. Together, the couple enjoys educating professional and home cooks about knife skills, the importance of maintenance and sharpening, and experiencing joy in the kitchen.
